You already know that coconut oil can be used on anything and everything. Just this morning, I rubbed some coconut oil on the toes of my leather shoes to smooth and polish them out. Unlike other oils, coconut oil is a solid at room temperature. This means that it’s most likely hard as a rock during the winter, and melted down like traditional oils in the summer. Coconut oil can be used in place of butter, shortening and oil in most (if not all) of baking/cooking. The only thing you may not want to do is use it to deep fry your foods.
If you try to rub coconut oil all over your life the way I do, I recommend keeping 2 jars handy: one for cooking/consumption and one for your hair/body. And always always always use a clean spoon or scoop when using the coconut oil so you don’t contaminate it. Even when I use it to deep condition my hair, I try my best not to stick my fingers in the jar. When cooking, I always pull out a clean spoon – not the same one I’ve been using to stir or mix the food.
When roasting veggies, you can toss the washed vegetables in coconut oil and then season as you normally would. Or you can even make kale chips, like this recipe on Instagram.
I also use coconut oil to make popcorn or homemade granola too – I’m a snacker, and these are both easy and quick enough to make at home with little to no effort.
One of my favorite ways to get some healthy fat into my diet is by adding a spoonful of coconut oil into my smoothie or juices. You can barely taste the difference, in my opinion. On the Vita Coco website, they share the following recipe for a Green Goddess Smoothie:
1 cup kale
1 cup spinach
1/2 cup apple
1/4 cup lemon juice
1 cup of your favorite coconut water
2 tsp coconut oil
1 cup ice
- In a blender, combine kale, spinach, apple, lemon juice, and coconut water and puree on high.
- Slowly add liquefied oil to mixture and blend again.
- Add ice and blend until completely smooth.
